Decades of political instability have taken a toll on Iraq’s national dish Masgouf, a grilled carp that is packed with spices and cooked over a fire altar. Iraqi fishermen hold on to their national flavor by continuing to hunt for carp despite massive changes to the waterways due to the wartime strategies of former president Saddam Hussein.
