James Tracey might be the coolest chef we have ever shot for Munchies. When we first meet up with someone, there is usually a 30-minute warm-up period, but not with James. Within seconds after we arrived at Craft, we were looking at freshly slaughtered suckling pigs, meeting his all-star butcher, and joking around with his sous-chefs, Melanie and Mac. We were shocked by how relaxed James is considering he’s the executive chef at Craft and Colicchio & Sons. He likes his razor clams raw and his beer cold.
